Roasted Tomato & Garlic ConFit

When you need a little something to snack on while dinner is being made. The roasted tomato and garlic confit will definitely be a hit for the family!


Ingredients

  • Turkey Bacon

  • Cherry Tomatoes

  • Fresh peeled Garlic Cloves

  • Extra Virgin Olive Oil (EVOO)

  • Salt & Pepper

  • Fresh Rosemary & Thyme

Instructions

  1. Preheat oven to 300 degrees and wash cherry tomatoes

  2. Grab a baking dish and add EVOO, fresh herbs, and cherry tomatoes and garlic cloves

  3. Cook uncovered for 1 ½ hours or until tomatoes have burst. However, not to the point where they lost their shape.

  4. Slice and chop turkey bacon to desired size. Cook on medium high heat until bacon is crispy.

  5. Add cooked bacon on top of your roasted tomato & garlic confit.

  6. Serve on a toasted baguette and enjoy!
