Classic French Toast w/ Blueberry Compote

Good Morning Wade’s Cuisine Fam! How’s everyone doing?

This morning I woke up and I was laying in bed reminiscing, thinking about some of the memories my grandmother and I shared. Now for anybody who knew me growing up, knows that was my GIRL! She held the family down and really was that anchor.

I remember hitting the streets of Long Island, NY in particular Freeport with her to run any errands she had. I was always her roll dog when it came to bingo (Side note - Ya man used to win some MONEY up in there ight! Lol shoot it got to the point they stop allowing kids in at certain Bingo Halls hahaha!)

Anyway - one memory I do hold true to my heart which inspired this recipe today is waking up some mornings and smelling her french toast on the stove. Now at the time I wasn’t sure what this lady was putting in her french toast, but they used to HIT!!)

So today in remembrance of my grandmother I made a classic french toast and up’d my game and threw a blueberry compote on top!

Check out the recipe and give it try b/c I promise you I KNOW I did my grandmother justice on this one!

French Toast Ingredients

  • (1) whole loaf Challah Bread

  • Unsalted Butter

  • (3) Eggs

  • (1) cup Heavy Cream

  • (1/2) cup Evaporated Milk

  • (1/2) cup Sugar

  • (1) teaspoon Vanilla Extract

  • (1) tablespoon Ground Cinnamon

  • (1) teaspoon Ground Nutmeg

  • (1) pinch Kosher Salt

  • Powdered Sugar (optional)

BLUEBERRY COMPOTE INGREDIENTS

  • (1) Pint fresh blueberries

  • (1/4) cup Granulated Sugar

  • (1/3) cup Water

  • Juice of (1) Lemon

  • (1) tsp Cornstarch


Berry Compote Instructions:

  1. Grab a medium size-sauce pan and on Medium-High heat add half the pint of blueberries, sugar, water, lemon juice, and cornstarch. Stir constantly allowing the mixture to thicken.

  2. Add remaining blueberries and stir. Remove from heat once finished.

Classic French Toast Instructions:

  1. Grab a large bowl and add Eggs, Heavy Cream, Evaporated Milk, Sugar, Vanilla Extract, Ground Cinnamon, Ground Nutmeg, and Kosher Salt. Whisk until well combined.

  2. Slice Challah Bread into thick slices.

  3. Grab a large skillet and place on Medium-High heat. Once skillet is hot add (1) tablespoon of Unsalted Butter.

  4. Once butter is melted, dip your Challah bread slices into your custard mixture on both sides. Ensure the bread is evenly coated around.

  5. Add bread slice to your skillet and cook until golden brown. Flip and repeat on the other side. (Tip - After each slice add (1) tablespoon of Unsalted Butter for the next slice)

  6. Once finished, stack your french toast on a place and top with your blueberry compote.

  7. Garnish with Powdered Sugar. (Optional)

  8. Serve and enjoy!
