Blueberry Banana Muffins

Breakfast the quote on quote most important meal of the day. Honestly, I’m not even sure how true that really is, but I love a good breakfast especially after a morning workout. Now back in the day muffins were my GO TO (along with Eggo Homestyle Waffles w/ the Butter Rich Syrup - don’t judge hahaha!)

Anyway - as y’all know I like to be more conscious now as I get older and I love testing out OG recipes and flipping them with a healthier alternative every now and then.

So this morning I made these Blueberry Banana muffins and let me tell you……BUSSIN!!! All jokes aside you might want to try this recipe and share with the fam or not hahaha bc they’re that damn good!

Ingredients

  • 2 1/2 cups Almond Flour

  • 1/2 cup Sugar Alternative (I used Miss Jones Smart Sugar Coconut Sugar Blend)

  • 1 tbsp Baking Powder

  • Blueberries (As many as you want!)

  • 2 Ripe Bananas

  • 1 tsp Pink Himalayan Salt or Kosher Salt

  • 3 Eggs

  • 1/3 cup Sugar Free Maple Syrup

  • 1 tsp Vanilla Extract

*Note - You can opt-out of using the Almond Flour, Sugar Alternative, and Sugar Free Syrup by using regular ingredients.


Instructions:

  1. Preheat oven to 400 degrees.

  2. Grab a large mixing bowl and add your dry ingredients (i.e. - Flour, Sugar, Baking Powder, and Salt).

  3. Then add your wet ingredients (i.e. - Eggs, Ripe Bananas, Blueberries, Sugar Free Maple Syrup, and Vanilla Extract).

  4. Mix until combined.

  5. Grab a muffin pan and add muffin holders or spray your pan with cooking spray.

  6. Bake for 20 minutes or until golden brown.

  7. Allow muffins to rest once out of the oven.

  8. Call the family down in the morning and enjoy!
