Salmon Scampi

I needed something quick tonight that would do the job! So I made a quick run to the grocery store and picked up some salmon and noodles and got right to it!

Tonight I whipped up a very easy Salmon Scampi. I opted for zucchini noodles this time, but you can DEFINITELY use regular pasta here too!

Ingredients

  • Salmon Fillet(s)

  • Pasta or Zucchini Noodles

  • Juice of (2) lemons or Fresh Organic Lemon Juice

  • 1/2 cup White Wine (I used Pinot Grigio)

  • 1/2 Shallot, crushed

  • (4) Garlic Cloves, crushed

  • 3 tbsp Unsalted Butter

  • Extra Virgin Olive Oil

  • Parmesan Cheese

  • Fresh Parsley, Chopped

Spices:

  • Kosher Salt

  • Black Pepper

  • Crushed Red Pepper

  • Garlic Powder

  • Herbs de Provence


Instructions:

*Note - If using regular pasta for this recipe, cook al dente style first*

  1. Grab a large skillet pan and place on Medium-High heat.

  2. Take a cutting board and dice your salmon fillets into cube-sized pieces.

  3. Season salmon with (1) tsp each of Kosher Salt, Black Pepper, and Herbs de Provence.

  4. Once your skillet is hot, add a few tablespoons of Extra Virgin Olive Oil (EVOO). Add Salmon and cook for 2-3 minutes on each side. (Note - We don’t need to fully cook the salmon here, we’re just looking for a nice sear on each side as we’ll place the salmon back into the pan later in the recipe….stay tuned!)

  5. Remove Salmon after you’ve gotten a nice sear and set aside.

  6. In the same pan, add (1) tbsp of EVOO to your pan. Then, add chopped garlic and shallots. Saute for a 1-2 minutes.

  7. Add (3) tbsp of Unsalted Butter.

  8. Once melted, add (1/2 cup) white wine and lemon juice.

  9. Season with (1) tsp each of Kosher Salt, Black Pepper, Crushed Red Pepper, Garlic Powder, and Herbs de Provence. Simmer sauce for 4-5 minutes to ensure you’ve cooked out the wine.

  10. Add zucchini noodles or al dente pasta and stir. Then add your dice salmon back into the pan.

  11. Stir to incorporate all ingredients. Turn heat down to a Medium-Low heat and simmer for a few more minutes.

  12. Remove from stove and grate fresh parmesan cheese on top.

  13. Garnish with fresh parsley.

  14. Serve and enjoy!
