Creamy Tuscan Chicken Pasta

Pasta, Chicken, Sun Dried Tomatoes…..I mean what’s not to like here!? Another great weekday meal option you can enjoy for yourself or with the fam!

Ingredients

  • Chicken Breasts

  • Penne Pasta or Preferred Pasta

  • (1) Jar Sun-Dried Tomatoes

  • (1) Small Yellow Onion (Diced)

  • (1) Bag of Spinach

  • All Purpose Flour (1 cup)

  • Fresh Garlic (Minced)

  • Heavy Cream

  • Parmesan Cheese

  • Fresh Parsley (Garnish)

  • Cooking Oil

SPICES:

  • Tuscan Garlic & Herb or Herbs de Provence

  • Kosher Salt

  • Black Pepper

  • Garlic Powder

  • Paprika

  • Crushed Red Pepper


Instructions:

  1. Preheat oven to 375 degrees.

  2. Cook Penne pasta or preferred pasta as instructed on packaging. Place to the side once finished. (Tip - Save atleast 1/2 cup of your pasta water, this’ll come in handy later!)

  3. Safely clean chicken breasts with water, white distilled vinegar and lemon juice.

  4. Pat chicken completely dry with a paper towel to remove any moisture. Place into a medium / large mixing bowl once finished.

  5. Add all purpose flour to a small mixing bowl and add (1) tbsp each of Tuscan Garlic & Herb, Paprika, and Black Pepper.

  6. Add a few teaspoons of cooking oil to the chicken and rub together.

  7. Season chicken with 1 tsp of Tuscan Garlic & Herb & Kosher Salt. Mix until fully combined.

  8. Sprinkle flour mixture on top of the chicken and fully coat. Shake off any excess flour.

  9. Heat a large skillet on Medium-High heat. Once hot, add a few teaspoons of cooking oil and add chicken face down.

  10. Sear chicken until golden brown, then flip.

  11. Using an oven safe dish, place chicken in the oven and cook until cooked. Remove once finished.

  12. On Medium-High heat using the same skillet add a few teaspoons of cooking oil (if necessary). Then, add diced onions and minced garlic. Saute until translucent.

  13. Add sun-dried tomatoes. Cook for 2-3 minutes.

  14. Add heavy cream. Start with 1 cup and add more if necessary.

  15. Season your sauce with (1) tsp each of the “Spices” listed above. If necessary, adjust seasoning based on taste.

  16. Once you have your desired taste, insert a few handfuls of fresh spinach. Cook until spinach becomes soft.

  17. Turn heat on Medium-Low and simmer your cream sauce for 3-4 minutes.

  18. Add your pasta and mix until well incorporated.

  19. Add 1-2 tbsp of pasta water. (Tip - this helps thicken the pasta sauce)

  20. Continue to stir and mix. Add grated parmesan cheese. Keep stirring, combining all ingredients.

  21. Place chicken on top. (Tip - you can slice your chicken at this stage)

  22. Simmer for another 1-2 minutes.

  23. Garnish with fresh parsley (optional).

  24. Serve and enjoy!
