Chipotle sweet Potato Chili w/ Ground turkey
I love this time of the year because the weather gets colder and it’s a perfect time to make heart warming meals.
This Chipotle Sweet Potato Chili w/ Ground Turkey (I like my Chili with a little kick) is a MUST each and every winter. A meal you can serve for the entire family.
Ingredients
2 lbs Ground Turkey or Ground Beef
3 medium sized Sweet Potatoes
1 small Red Onion
Red & Green Bell Peppers (1 each)
Fresh Garlic
2 cups Beef Broth
Liquid Smoke (1 dash)
Worcestershire Sauce (3 dashes)
1 can Chipotle in Adobo Sauce
1 can low sodium Black Beans
1 14.5 oz. can Fire Roasted Diced Tomatoes
1 can Tomato Paste
1 small can Tomato Sauce
Spices:
Kosher Salt (2 tablespoons)
Black Pepper (1 tablespoon)
Onion & Garlic Powder (1 tablespoon each)
Smoked Paprika (1 tablespoon)
Chipotle Powder (1 tablespoon)
Ground Thyme or Regular Thyme (1 tablespoon)
Ground Cumin (2 tablespoons)
Ancho Chili Powder (1 teaspoon)
Ground Coriander (1 teaspoon)
Instructions:
1. Wash Sweet Potatoes. Then preheat oven to 425 degrees. Wrap sweet potatoes in aluminum foil and drizzle cooking oil over top. Cook for 1 hour.
2. Brown your ground Turkey or ground beef in a large quart pan for 4-5 minutes.
3. Add diced onions, bell peppers and garlic. Cook veggies for 2-3 minutes.
4. Add Fire Roasted Diced Tomatoes, Tomato Paste, Tomato Sauce, and Chipotle in Adobo Sauce, Black Beans and stir. (Note - only use the sauce from the can of the Chipotle in Adobo sauce unless you want your chili REALLY spicy 🌶)
5. Drop a few dashes of Worcestershire Sauce & Liquid Smoke (optional) 6. Add your (2) cups of Beef Broth.
7. Take your “Spices” listed above and add to your chili. Stir and adjust seasoning if necessary.
8. TASTE, TASTE, TASTE
9. Cover and simmer for 35-40 minutes.
10. Once sweet potatoes are finished, add the potatoes to the chili (skin removed).
11. Stir and simmer for another 15-20 minutes.
12. Garnish with Sour Cream, Jalapeño Peppers and Cheese.
