Oven Roasted Peruvian Chicken
Mannnnn let me tell you! I’ve never tried Peruvian food until I went to Viva Chicken. From the first time I had it I was OBESSED with the flavor of the chicken, but also the sauces that accommodated the chicken. One night I said to myself “I can make that” and this is what I came up with!
Ingredients
(1) Whole Chicken
(2) Limes
Cooking Oil
SPICES
Black Pepper
Ground Cumin
Ground Oregano
Smoked Paprika or Regular Paprika
Garlic Powder
Onion Powder
Spice House “Peri Peri” (Optional)
Kosher Salt
Green Sauce Ingredients:
(5) Fresh Garlic Cloves
1/2 bunch of Cilantro
(4) Jalapeños
1/2 cup of Mayonnaise
Juice of (1) Lime
Salt & Pepper to taste
Instructions:
Add all “Green Sauce” Ingredients to a blender and blend until smooth. Place in refrigerator once finished.
Preheat oven to 375 degrees.
Remove chicken from packaging. Clean with water, vinegar and lime juice.
Pat dry once finished.
Remove the spine from the back of the chicken using kitchen shears. (Note - It’s very easy trust me. If this is your first time. YouTube is your best friend right here!)
In a small mixing bowl add (1) tablespoon each of the “Spices” listed above plus the juice of (1) lime & a few tablespoons of Extra Virgin Olive Oil or preferred Cooking Oil.
Mix marinade together until well combined.
Pour marinade on chicken and rub until fully incorporated.
Grab a cast iron pan or an oven safe dish and add your chicken.
Place chicken in oven and cook for 1 1/2 hours or until chicken full cooked. (Note - Make sure you’re basting your chicken throughout the cooking process)
Once chicken is finished serve with your favorite side dish and enjoy!
