Eastern N.C. Pulled Chicken Sandwich
I moved to Charlotte, NC back in 2017 and I learned REAL quick since being down here what’s the difference between Western & Eastern Carolina BBQ LOL! After much consideration, I’m riding with my people on the East Side! I still hold love to my folks on the West side though.
Anyway haha, pulled chicken sandwiches are good anytime of the year I feel like. Also, this is a great meal to make for the family because this recipes provides more than enough to go around PLUS seconds!

Ingredients
Boneless Skinless Chicken Breasts or Chicken Thighs
1 1/2 cup Low Sodium Chicken Stock
1 Personal Beer Bottle (I used Stella Artois)
3 Bay Leaves
1 medium Red Onion
1 bottle George’s BBQ Sauce or your preferred BBQ Sauce
A few dashes of Liquid Smoke (Check condiment aisle at your local grocery store, it’s near the BBQ Sauce)
1 tsp Worcestershire Sauce
Spices
Kosher Salt
White Pepper or Black Pepper
Onion Powder
Granulated Garlic
Cayenne Pepper
Chili Powder
Ground Cumin
Ground Coriander
Smoked Paprika or Regular Paprika
Instructions:
1. Safely clean chicken with water, vinegar and lemon juice.
2. Grab a Large Quart Pan and place on medium high heat.
3. In a large mixing bowl add chicken and pat completely dry to remove any remaining moisture.
4. Add (1) tablespoon of Kosher Salt or (1) tablespoon per pound of chicken.
5. Season liberally with the remaining “Spices” listed above.
6. Add a few tablespoons of Extra Virgin Olive Oil to the pan.
7. Sear chicken on each side for 2-3 minutes or until a nice crust has formed around the chicken.
8. Add Chicken Stock, Beer, Bay Leaves, Red Onion, Liquid Smoke, and Worcestershire Sauce.
9. Cover and allow chicken to simmer for 40-45 minutes or until you can pull it apart with a fork.
10. Once finished, remove chicken and place into aluminum pan or oven safe dish. In addition, preheat oven to 425.
11. Pull chicken apart with a fork and knife and add your preferred BBQ Sauce with (1) tsp of Liquid Smoke.
12. Cook for an additional 7-8 minutes or until BBQ sauce gets a chance to heat up.
13. Assemble as a sandwich with some slaw and enjoy!
